- 1 can (15 oz) black-eyed peas or black beans, drained
- ¼ tsp salt
- ½ can (15 oz) corn, drained
- ¼ tsp pepper
- ½ bunch cilantro chopped
- 1 avocado *optional
- 3 green onions chopped
- 3 medium tomatoes chopped
- ½ tablespoon oil
- 1 tablespoon vinegar or lime juice
Drain and rinse the black-eyed peas (or black beans) and corn. Combine beans and corn in a large bowl.
Add cilantro, green onions and tomatoes to the bowl and stir.
Mix oil, vinegar (or lime juice), salt and pepper in a small bowl.
Pour oil mixture over salad ingredients and toss lightly. Top with *avocado, if desired.
