Ingredients
  • 2 cups rolled oats
  • 1/2 cup nut butter (peanut, almond, cashew)
  • 1/3 cup honey or maple syrup
  • 1 cup mix-ins (nuts, seeds, shredded coconut, dried fruit, chocolate chips), finely chopped
  • 1/2 tsp vanilla extract
  • Pinch of salt
Instructions
  1. In a small plan, gently heat the nut butter and honey or maple syrup until smooth and easy to stir.

  2. In a large bowl, combine oats and mix-ins. Stir well.

  3. Line an 8x8 baking dish with parchment paper. Press the mixture down firmly (this helps them hold together).

  4. Refrigerate for at least 1-2 hours until firm.

  5. Cut into bars or squares and enjoy.

  6. Store for up to 1 week in the refrigerator or 2-3 months in the freezer.
