Black Bean and Eggplant Chili
- 1 cup fresh eggplant cut into cubes
- 1 teaspoon cumin
- 1 can black beans
- 1 teaspoon oil
- 1 can (14.5 oz) can diced tomatoes or 2 fresh medium tomatoes
- 1 cup water
- ½ cup chopped onions
- 2 teaspoons garlic powder
- 1 can (4 oz) diced green chiles *optional: chili flakes
- 2 teaspoons paprika
In a saucepan, cook onions in oil for 5 minutes.
Add eggplant, tomatoes, bell peppers, green chiles, spices and water.
Simmer for 15 minutes.
For extra spice, top with chili flakes*.
